Chocolate No Bake Cookies

I am all for eating as healthfully as youcan, but there are times my friends where even the healthiest of eaters needs atreat. No treats mean a very grumpy girl.

Today I was heading towards extremegrumpiness (Is there such a word?). There was only one thing for it, and itneeded to be chocolate. Add to that of course it needed to be vegan andgluten free. And lets just finish that off with a dose of I can’t be bothered cooking.

If that sounds familiar – I have the easy,quick and delicious solution for you.

Chocolate No Bake Cookies

Ingredients
1/2 cup vegan margarine
3 tbsp soy or almond milk (I used almond)
1 cup sugar
200 grams dairy free chocolate
2 cups rice bubbles
3 cups gluten free oats

(Simple huh? But that is what the blog is about)

Directions

Get two large baking sheets ready by lining with waxed baking paper. You need to do this at the beginning as the mixture starts hardening as soon as you take it off the heat.

Set your element to a low to medium heat, and in a large saucepan bring the margarine, milk, chocolate and sugar to the boil stirring constantly.

Remove the saucepan from the heat and add the oats and rice bubbles, mix well.

Drop the mixture using a Tablespoon onto the paper – quickly!

Refrigerate until at the consistency you prefer.

I have one little confession:  they need to sit in the fridge to harden so you can’t eat them straight away, and when you are desperate for chocolate relief that feels like ages. My solution? Save some mixture and eat it directly from the pan while you are waiting………………..

Just in case you wanted to cook me something……

Hi!
I am loving this cooking lark, and loving learning new recipes (and how to use kitchen equipment) but right now I have a hankering for someone to cook something for me!
I have been collecting up a series of recipes that I have been super keen to make by some of my favourite bloggers, and from the lovely new blogs I have discovered.
So with the weekend getting closer, just in case you had the urge to invite me over, I thought I might post them for you. No pressure.

First up is of course breakfast. I am figuring no one will want to see me super early, so Mark will probably need to step up to this one.
I am desperate to have a taste of Baked Banana Peanut Butter Fudgey Oatmeal care of Char’s Kitchen.

Breakfast has always been my favourite meal of the day, and with a broken blender and rushing to work lately, breakfast has been pretty boring.This however looks delicious, a little decadent, and so filling. While you are checking out the recipe, check out the whole blog. I have just recently discovered it, and it is fantastic.

There were so many options for my lunch choice, but I think it would have to be these Crazy Sexy Nori Rolls from Healthy Crush.

Jenny doesn’t know it, but she is one of my mentors from afar in terms of blogging and nutrition, and how she is developing her business. She has a new ebook out which is so worth checking out.
This is my idea of the perfect light healthy lunch.

To make it easy for you in the evening(after all you will have been cooking for me all day) I have chosen something simple and delicious from one of my favourite new blogs – Vegan Sparkles

Roast Veg, Mango and Coconut Curry.

I love curry. And just in case she is reading, I have a particular English friend in mind, that I am sure could whip this up a treat. Vegan Sparkles is another blog you should definitely check out. If you live in Perth Australia, her reviews of eateries are fabulous.
And finally of course, no day of being waited on hand and foot would be complete without dessert. My favourite dessert for a long time has been Tiramisu. I have searched far and wide for a veganised version, and my friends, I think this is the one.

I bet that if you popped the leftovers( if there were any!) in the fridge, it would be unbelievable the next morning. Because there really is nothing like pudding for breakfast.

So my friends, quite clearly the question for the day is:

Who is cooking for me this weekend!
