Friday facts

It’s Friday! And even better only a week until Christmas. This week my baby has finished primary school, work has been really busy, and my husband has had many late nights at work – so not much time for deep and meaningful blogging.

So – instead, a list of five completely unrelated facts.

One
This is my beautiful boy, George. He is stubborn, lazy, and the biggest baby ever, but I love him to bits. He also reminds me every time  I get home from work and am greeted by his excited face at the door why I don’t eat animals.

Naughty and Nice Vegan Enchilada casserole

Using this recipe from Oh she glows.

I altered it slightly and used gluten free pasta, and also left out the cheese until the last few moments. I then topped 3/4 of it with cheese for those in the family who still eat cheese, and on my quarter added some blue cheeze. I popped it back in the oven for a few minutes and grilled it to get a nice cheezy crunchy topping. Seriously delicious.

I would have used a proper camera to take the photo as per my December goals, however my daughter took the camera to camp and walked through a waist deep river with it in her pocket. No more camera.

The Butterfly Effect

Sometimes when you are running against the crowd, doing something different, standing up for your principles, it can feel a little bit overwhelming. It feels like you are not really making a difference in the world, and for some of us that is something we yearn to do.
At times like that – remember the Butterfly effect.

I could give you a scientific explanation for the butterfly effect, but at it’s most basic level it describes the theory that a tiny action or shift in thinking can cause a much larger reaction somewhere else sometime in the future.

This is exciting. It means that every decision you make, word you speak, or action you take does make a difference to the world and your experience of the world - no matter how small it may seem at the time.

In terms of wellness this means for me that every decision I make to relax, eat something healthy, or ignore a negative thought will affect how I experience my life in the future.

One of my dreams is to help others live a healthier and happier lifestyle. It is so encouraging to remember that my small changes can make a difference. A quick chat at the work lunchroom table about how delicious my lunch looks (which happens to be vegan), could lead to someone trying one healthy meat free recipe. They could mention our discussion to one other person and so the chain of events begins.

Every little thing you do makes a difference and can cause far reaching changes and improvements in your world, although you may not see it now.
